We have been producing high quality wines since 1900, now in their third generation, always in an authentic Salento atmosphere

metiusco RED

Negroamaro, Malvasia Nera di Lecce, Primitivo, espalier and sapling, from 70 to 100 quintals per hectare.
When in 1996 Ninì, Arcangelo’s son and the second generation of the winery, abandoned bulk wine production and switched to the bottle, he chose a blend of the three indigenous varieties most prevalent in the area, creating a wine with a traditional yet extremely modern feel. With three different harvest eras and three independent vinifications, the new blend is immediately bottled and put on the market from the very first months of its life. Fresh, fruity, elegant, easy to drink, but very structured and intense-a wine suitable for the boldest pairings.

metiusco rosè

100% Negroamaro, sapling, 90 quintals per hectare.
Metiusco rosé is processed with the bleeding technique: once the grapes have been processed, the crushed grapes are subjected to cryomaceration for a period ranging from 15 to 20 hours, at the end of which it is extracted from the bottom of the tank and only the 30% of the must. A temperature-controlled fermentation follows. Temperature-controlled fermentation follows.

metiusco bianco

Verdeca, Malvasia Bianca, espalier, 90 quintals per hectare.
We use the two most popular native varieties, expertly balanced to enhance their characteristics. Verdeca for acidity, savoriness and freshness, Malvasia is overmatured in the vineyard, and then in the winery works in battonage to increase structure and fruit. Both varieties ferment in steel and at controlled temperatures. The raw wine blend is processed in reduction.

mavro negroamaro

100% Negroamaro, sapling and espalier, 80 quintals per hectare.
As with all of our top reds, not all vintages allow us to produce Mavro.
We need a perfect balance between sugar content and acidity in the grapes to produce a Negroamaro that can stand the test of time, 12 months in barrique and many years in bottle.
Structure, tannins and bitter aftertaste do justice to our finest grapes.

mavro primitivo

Primitivo 100%, sapling and counter-espalier, 90 quintals per hectare. Harvested in August, the grapes undergo slight over-ripening in the vineyard, then ferment in stainless steel. After malolactic fermentation it rests in French alier barriques for at least 12 months, on woods ranging from first to fourth passage.
The wise choice of woods enhances the balance and elegance of a pure Primitivo with a great structure, never cloying but surprisingly fresh.

vino d'arcangelo

“By jealously vinifying the pure Black Malvasia, he created the nectar intended for him and his loved ones, which he met both on cold winter evenings and on hot summer nights, watering every dish with its generous perfume on the table. In memory of Archangel, father of the company”.

100% Malvasia Nera di Lecce, vinified traditionally, respecting the grape variety and the potential of this ancient blend.

The Wines Palamà house has been based in Cutrofiano, in Salento, since 1936.
The wines are obtained from indigenous Apulian vines grown in spagliera or albarello: Negroamaro, Primitivo, Malvasia Nera, Malvasia Bianca and Verdeca, they are vinified alone or in blend.
Ninì and his family personally take care of the vineyards, harvesting and vinification.
